In celebration of our first snow of the year we decided we should make cookies! These are gooey, soft, nutty cookies that use whole wheat flour & honey as the sweetener. They're actually healthy for you!
1 cup canola oil or melted butter
2/3 cup honey
1 tsp. cinnamon
1 tsp. Real Salt
1 tsp. baking soda
2 cups whole wheat flour (I prefer Prairie Gold)
3 cups oats
1/2 cup raisins
1/2-1 cup nuts
Preheat oven to 325 degrees. Spray a cookie sheet with oil spray. Put eggs, oil, honey into mixing bowl and beat until smooth. Add baking soda, salt & cinnamon & mix well. Add flour, oats, nuts & raisins, mix until combined. Spoon onto baking sheet, and bake about 8-10 minutes, until set but not firm. Let cool & enjoy! Great the next morning also for breakfast cookies. Makes about 16-18 good sized cookies :) You could chill the dough beforehand for a prettier cookie but we never take the time!
